golden ticket

lobster mac &cheese


So remember the really decadent meal I was talking about a few days ago? TADA! Here it is.  I made lobster mac and cheese.  What inspired me to make lobster mac and cheese?  I don't really know.  Some days I just go to the market and buy whatever looks good that day.  It was a toss up between scallops and lobster.  Lobster came home with me that day.  I also saw it being featured on some cooking show a few days ago.  It may have been subconsciously embedded in my head.  I think this may have been Josh's favorite dish to date.  I served it with some pork tenderloin and the pork took a back seat and shoved to the side of the plate.  I made this last night and I made plenty of it.  I don't think there is any left.  I got a suggestion from Josh about this dish.  He suggested that next time I make it, hypothetically speaking, if we HAD to leave lobster out, he thought that bacon would be a good substitution.  I agree.  It's not like we can eat lobster everyday.  Although, I must say that lobster is not that expensive compared to other seafood in general.  The lobster was $9.99/lb.  I spent about $20 on 3 lobster tails.  You would spend that much  buying any kind of fish like halibut or mahi mahi.  I used asiago cheese and I think it added a nice flavor to the cheese sauce.  For some color and texture I added some green peas.  Needless to say this dish was a huge success.  If you ever need to make a dinner to please, this dish is the golden ticket!

the lobster!

shredded cheddar and asiago cheese

roux coming together. 3 tablespoons flour & 3 tablespoons butter

add the milk, salt, pepper, and nutmeg

stir the cheese

add the pasta

par boiled lobster tails

add the lobster

place the mac & cheese in a baking dish and bake at 450 for 20-25 minutes until golden brown
